Mama’s Biscuits Star Spangled Blueberry Cobbler
For the filling:
6 cups fresh or frozen blueberries
1/2 cup sugar
Juice of one lemon
3 TB flour
For the biscuit topping:
1 package Mama’s Biscuits
2 teaspoons poppyseeds
Zest of one lemon, grated
1 TB sugar
4 TB cold butter diced
1/2 cup buttermilk
Preheat oven to 425
In a 9” cast iron skillet combine berries, sugar, flour and lemon juice. Stir to combine and set aside.
Combine 1 bag Mamma’s Biscuit Buttermilk Biscuit Mix, poppyseeds, sugar, lemon zest and stir. Add in cold butter and work through dry ingredients with a pastry cutter, fork or your fingers until butter is the size of small peas and mixture is crumbly. Add buttermilk and stir until soft dough forms.
On a flour dusted work surface gently roll out dough to approximately 1” thick. With several sizes of star shaped cookie cutters cut biscuit dough into stars, re-rolling and cutting the scraps.
Place star biscuit on top of the blueberry filling mixture, brush with milk and sprinkle with sugar.
Bake for 35-40 minutes until biscuits are golden brown and filling is bubbling. Let cool slightly and serve with fresh strawberries and vanilla ice cream if desired
