Mama’s Biscuits Apple-Walnut Olive Oil Crumb Coffee Cake
2/3 cup Mama’s Biscuits Southern Style Biscuit Mix ™
2/3 cup packed brown sugar
2 teaspoons ground cinnamon
1/4 cup cold butter
2 cups Mama’s Biscuits Southern Style Biscuit Mix ™
1/2 cup milk
1/4 cup olive oil
2 tablespoons sugar
2 medium apples, peeled and thinly sliced (Granny Smith or Fuji are great here)
2 tablespoons chopped walnuts
Heat oven to 375°F.
Spray an 8 inch square pan with cooking spray.
To make crumb topping:
In small bowl, mix Mama’s Biscuits Southern Style Biscuit Mix ™ , 2/3 cup brown sugar and cinnamon. Cut in butter, using pastry blender or 2 forks until crumbly.
To make coffee cake:
In medium bowl, stir together 2 cups Mama’s Biscuits Southern Style Biscuit Mix ™ , 1/2 cup milk, olive oil, sugar and egg and mix well to combine.
Spread half of batter in pan. Arrange apple slices on top of batter; sprinkle with half of crumb topping. Dollop with remaining batter; sprinkle with remaining crumb topping. Sprinkle with walnuts.
Bake about 35 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 20 minutes before slicing.
